Martinsville Meatloaf...

Martinsville Meatloaf

1 lbs ground chuck (if your man is a hunter use 1 lb of ground deer and about 2 oz of ground chuck)
1 lb bacon
1/2 medium sized sweet onion  (chopped)
1 jalapeno chopped (use 1/2 medium green pepper if you don't like the spice)
12 saltine crackers (crushed)
1 large egg
1 tsp mustard
1 tbsp wochestershire sauce
2 tbsp ketchup
1 clove garlic (minced)
1 tsp salt
1 tsp ground black pepper

Mix all ingredients (except bacon) in a larger mixing bowl. In the center a 9 x 13 greased pan shape mixture into a loaf form. cover in bacon diagonally until none of the mixture is showing. Place two long pieces of bacon along each side of the loaf, sealing the diagonal pieces ends.  Broil at 500 degrees for 5 minutes then bake at 350 degrees for 30 minutes. Let rest for 10 minutes, slice and serve. (For a browner crust, broil for another 5 minutes after baking.) 


Serve with your favorite sides.

The great 11 debate...

After Denny Hamlin's back injury in last weeks race, the buzz has been who is going to drive? At first it seemed like Mark Martin will be taking over the 11 for the next 6 weeks. However, today Joe Gibbs announced that Mark Martin will be in the 11 for Martinsville but Brian Vickers will be filling in for the other races starting in Texas. Mark Martin had already told his own team he did not want to drive at Talladega. Having Brain Vickers run the other 5 races seems to be a more reliable answer, especially if for some reason Hamlin has to sit out for long. This is very confusing. Even Denny Hamlin himself doesn't know what is really going on. Hopefully, Hamlin will have an easy recovery and won't have to miss anymore then the expected races. The twitter feeds have been going haywire ever since last weeks race in Fontana. Martinsville should bring the next chapter in the Lagano / Stewart battle but we all have to wait to see what lies next for the Lagano / Hamlin adventures.

HAPPY BIRTHDAY DANICA!


As the Wheel turns- Fontana Edition


Well, The Auto Club 400… Where to start? So much action was seen yesterday at what is considered to be an extremely boring 2 mile track. It all started with pole sitter Denny Hamlin. Matt Kenseth quickly took the lead off the line with Kyle Busch to take it just 10 laps later. All while Logano was making sure that Hamlin knew he was there. Both Keselowski and Biffle had to start in the back due to engine changes, both raced well but seemed to lose a lot of positions they gained in the pits. The outside wall was chomping on cars as they went by! Clint Bowyer, Kurt Busch, Kasey Kahne, and others all had evidence that the pesky wall had chosen them for a snack yesterday! With several uneventful cautions, Joey Logano and Kyle Busch battled back and forth for the lead. Then we start seeing the fun stuff, 70 laps to go and Ole Smoke gets the lead. (Good thing too, he hadn’t lead a lap yet this season!) However nothing last forever, and Kyle Busch was back in the lead 18 laps later. A lot of the pack had to make green stop pits with 40-35 to go, putting some of the top contenders of the day in the back.

The cautions start flying in with 30 to go. Starting with Marcus Ambroise who blew a tire, 5 laps later Mark Martin spins out bringing another caution (I think he might have been made the outside walls lunch, but not sure about that one). Fifteen Laps to go and Clint Bowyer blows up bringing out another caution. After that we come to the Final restart where it gets mighty interesting. Ole Smoke had worked his way back to the top but Logano was not going to let him in front. Logano blocks him down on the inside and the firecrackers begin! Next thing we know Logano and Hamlin are closing in on Busch and battling each other for the lead. Going back and forth with each other the White Flag comes out with Logano in front. They end up wrecking each other, with Hamlin coming down and hitting the inside wall, head on and hard. Kyle Busch breezes right by them for the WIN!


The fun doesn’t stop there boys and girls. Unfortunately, Hamlin was air lifted to the hospital complaining of back problems.  Tony wanted revenge for that block move Logano pulled on him earlier. Coming down pit road tony cuts him off and makes sure they are stopped.  Although it took Smoke some time to get out of the car he was definitely on fire when he did.  He approached Logano yelling and pushing him. In which, Logano responded by throwing a water bottle that he had as people separated the two.  During an Interview Tony said that “He (Lagano) was nothing but a spoiled little rich kid who never had to work a day in his life.” I expect that the saga will continue in Martinsville for sure. I am also praying for Denny Hamlin. Meanwhile, Busch was happy to get the win and Dale Earnhardt Jr. moved to first in points.

FONTANA FUN DIP

On Fridays of each week I will be posting a new recipe for my followers to try out with their friends on race day! Here's the first edition!

FONTANA FUN DIP:
1 cup sour cream
8 oz. mascarpone cheese
1/2 cup sugar
1/3 cup margarita mix
1 tbsp lime zest
2 tbsp tequila (silver preferred)
1 tbsp grand marnier (or orange liqueur)
1 cup whipped cream

In an electric mixing bowl, combine all ingredients except whipped cream. beat until smooth. Fold whipped cream into sour cream mixture. Place in serving bowl. Garnish with lime zest. Serve with Cinnamon tortilla crisps.

**Cinnamon Tortilla Crisps**
2 tbsp sugar
1 tsp ground cinnamon
8 flour tortillas
6 tbsp butter, melted

Combine cinnamon and sugar. Brush tortillas with melted butter. Cut into wedsges. Arrange in single layer on baking sheet. Lightly sprinkle cinnamon mixture over. Bake in preheated 400 degree oven for 4-6 minutes.
